What you should know about Companion Bakery
The owners are pursuing other projects and remain to operate aw.sourdough.com. Thank you to everyone for your encourage over the years. The bakery features a large wood fired Alan Scott oven our bread is baked by wood fire. A large stainless bakers table forms the central workbench where bakers and pastry chefs practice their art daily, as can be seen via the web cam. Organic yield Caring for the people you bake for, and conserving the planet's instinctive environment. We use 100 organic flour, organic apples, organic walnuts and whatever else we can get our hands on. Quality ingredients from local producers Active directly with local producers is very satisfying. Local producers often bear a better quality product too! We use Tasmanian: apples, pumpkin, walnuts, berries and other ingredients in our bread. Bread is made from Tasmanian organic flour from Callington Mill, which is opposite the bakery. Dialogue with the custom r Companion Bakery uses the baking standards of the Artisan Baker Association, designed to inform the customer on what exactly is going into their bread. All of our bread is naturally leavened using the sourdough process of long fermentation times. Smaller bakeries A belief shared with Crystal Waters in south east Queensland is that smaller local bakeries, are of greater profit to people and the environment. The only mill of its humane in the Southern hemisphere, the mill has been restored into a fully occupied flour mill, producing organic flour and specializing in ancient grains such as Rye, pelt and Quinoa. Companion Bakery is opposite the mill and uses the freshly ground flour in our bread. The mill and its flour also form part of our baking classes.
